02 Ingredients
  • Pies
    • 12 wooden candy sticks
    • 1 egg (whisked for egg wash)
    • 1 tbsp. cornstarch
    • 1 tsp. fresh lemon juice
    • 1/4 tsp. salt
    • 1/4 tsp. cinnamon
    • 1/4 tsp. nutmeg
    • 1/2 tsp. ginger
    • 1/4 cup ginger ale
    • 1 cup granulated stevia
    • 1 cup fresh blueberries
    • 1 1/2 cups apples (peeled and diced)
    • 1 all-butter pie dough
  • All-Butter Pie Dough
    • 4 tbsp. ice water
    • 1 tsp. vanilla
    • 1/2 cup unsalted butter (cold)
    • 1/2 tsp. salt
    • 1 1/2 cups all-purpose flour
03 Method
  • Step 1
In a food processor, pulse together the flour and salt twice to blend. Add in the butter and pulse until pea-sized crumbs form. Add in the vanilla and water, one tablespoon at a time until clumps form.
  • Step 2
Dump mixture onto a floured surface and shape dough into a disk. Wrap in cling wrap and refrigerate for at least 2 hours.
  • Step 3
Preheat oven to 375°F and line a baking sheet with parchment paper.
  • Step 4
In a skillet over low heat, simmer the apples, blueberries, stevia, ginger ale, nutmeg, cinnamon, and salt. Stir continuously until fruit is broken down (about 5 minutes).
  • Step 5
In a small mixing bowl, whisk together the lemon juice and cornstarch. Pour mixture over the fruit filling and stir for about 60 seconds until the mixture thickens.
  • Step 6
Remove from heat and let cool while you roll the dough. On a floured surface, roll dough to 1/8th inch thick. Cut out 12 3-inch circles.
  • Step 7
Add a tablespoon of filling onto 6 of the circles and brush the edges with egg wash.
  • Step 8
Place a wooden stick in the center and top with a second circle of dough. Press down the edges with a fork to seal.
  • Step 9
Brush the tops with more egg wash and place on the baking sheet. Bake for 15 minutes, until tops are golden brown and filling bubbles.
  • Step 10
Let cool to room temperature before serving. Enjoy!
